Easy Bottarga Vinaigrette


Ingredients
1/2 shallot, finely diced
1/4 cup olive oil
1/4 cup sherry vinegar
1/8 teaspoon black pepper
1 teaspoon finely grated bottarga

Directions 
Mix all ingredients in a mason jar. Cover with lid and shake for 10-15 seconds.

Uses

Dress over salads, freshly sliced avocado, grilled vegetables or fish.
