Pan con Tomate with Sardine or Anchovy

Ingredients
1/2 baguette of your favorite bread, cut 1/2” on the bias
1 medium tomato, cut in half
1 garlic clove
1 tin of high quality sardines or anchovies
1 tablespoon of grated bottarga

Directions

  1. Heat 1 tablespoon of olive oil over medium-high heat in a pan. Add the bread and brown each side, about 90 seconds each side.

  2. When hot, rub the edges of the bread with the garlic clove.

  3. Using the tomato as a brush, rub the bread 6-8 times, soaking the bread in tomato juice.

  4. Top the bread with 1-2 pieces of tinned sardine or anchovy.

  5. Finish by finely grating bottarga over the top.

    Chef’s note: Best enjoyed if eaten immediately!
