The pristine waters of the Florida Gulf Coast, off of Anna Maria Island and the connecting fishing village of Cortez, are home to one of this country's last sustaining wild fisheries. Brothers Seth and Mic Cripe, Florida natives, started Cortez Conservas with the mission of working to create high quality preserved local seafood, and to support their friends and family's way of life as fisherman, and help preserve it for the livelihood of future generations.
From the sea to the finished product, we do it all - fishing sustainably using hand-thrown cast nets and/or Pole and Line, cleaning the catch, curing the fresh harvest in salt and patiently drying it to ensure optimum quality and preservation. This is all completed within days of the catch, thereby creating the freshest seafood conservas you will ever try. These vibrant seafood delicacies are enjoyed by foodies around the world as stand alone umami and/or will add wonderful complexity to a variety of dishes with their bright flavors and balanced salinity. We are confident that we produce the truest expression of Striped Grey Mullet Bottarga, Smoked Mullet Roe and BlackFin Tuna Mojama in the world!

Rafaela grew up in Florianopolis, in the south of Brazil, where she learned to paint from a very young age. All of our labels are from original paintings that Rafa did to add authenticity and artistry to our conservas. The originals paintings of the labels along with her 'seafood series' all hang in our LOLA Wines/Cortez Conservas tasting room in Calistoga, Napa Valley

Originally built in 1892, The LOLA House tasting room is a quaint and welcoming place, full of charm and soul, located in the historical, hamlet town of Calistoga at the northern end of the Napa Valley. With its historical architecture and ‘old world’ feel, The LOLA House is the ideal place to showcase our bright, pure and natural LOLA wines and our award winning Cortez Conservas, along with sharing a bit of who we are and our passions and interest for food, wine, art, history, the ocean and surfing.
We hope to provide everyone that visits with a unique and original experience tasting hand crafted conservas, soulful wines, exploring the stories of our history and also appreciating the collection of original art gracing the walls throughout the house.
