We are proud to be the first producers of Bottarga in the United States of America. We believe we make the truest expression of Striped Grey Mullet Bottarga and Smoked Mullet Roe in the world. Our pristine waters off the Florida Gulf Coast, near Anna Maria Island and the neighboring fishing village of Cortez, are home to one of this country's last remaining sustaining wild fisheries in the country. Brothers Seth and Micolaus Cripe started Cortez Conservas with the mission of not only creating the best possible bottarga in the world, but also developing other sustainably sourced, locally caught, and intentionally preserved seafood products to add more value to their hometown fishery and community.

  • How to Use Bottarga

    You don’t have to be a professional chef to start using bottarga. It grates like Parmesan and shaves like truffles, so start there. We love it on crusty bread w/ butter, grilled vegetables like zucchini or eggplant, cheese pizza — even fried eggs in the morning.

    Bottarga is sacred, an ancient superfood that has crossed world cultures for thousands of years. Rich in Omega 3’s, high in Zinc, Selenium, Iron, Calcium, and Vitamins A, C, E, K12 and B12, it’s also one of the most concentrated natural sources of Vitamin D on Earth. Not only that, it packs more protein than chicken, beef and eggs at 50g per 100g. A truly nutrient dense powerhouse.
