Soft Scramble with Bottarga

Ingredients
2 tablespoons unsalted butter
4 large eggs
Salt and pepper
Finely grated bottarga

Directions

  1. Heat a medium-sized skillet over medium low heat.

  2. Add butter to the pan.

  3. While the butter melts, add the eggs to a large bowl with a generous pinch of salt and pepper and beat for 30 seconds. Add the eggs to the skillet and cook over moderately low heat, stirring constantly, until small curds form (about 8 minutes). Remove the skillet from heat.

  4. Plate the eggs immediately and finely grate bottarga over the top, along with freshly cracked pepper.
