We’ve long believed that Smoked Mullet Roe is one of the most amazing ways to prepare and enjoy the prized eggs of Grey Mullet. Native Americans, who inhabited the Gulf Coast of Florida, were smoking fish and roe with Buttonwood for thousands of years. Even in recent years, this has been a revered preparation of both Mullet roe and the fish itself in the deep South.

Florida Buttonwood is a species of mangrove native to the Gulf Coast of Florida that has long been the preferred local smoking wood for seafood, due to its consistent smoke point and mild mellow flavor.

When prepared properly at a low temperature hot smoke, the roe takes on the consistency of a soft cheese (think smoked Gouda) and is best enjoyed sliced on bread or crackers. The flavors are rich and smooth, with a beautiful umami balance of smoke and sea. There’s truly no more authentic and unique food product that speaks to the heritage of the Gulf Coast of Florida.
