Our Blackfin Tuna Mojama is Blackfin Tuna loin that’s salt-cured and dried for eight weeks; a true historical Mediterranean delicacy. (Think prosciutto-of-the-sea.) Blackfin Tuna from the Gulf of Mexico are the world's smallest true tuna species. They’ve long been considered a by-catch due their small size, and need to be caught by pole and line. Blackfin are a short lifecycle fish, meaning they only live up to seven years. They reproduce rapidly and prolifically, making this the exact type of seafood that we should be eating (i.e. low in mercury and toxins due to their short life span, sustainably caught and managed, etc). So, you can feel good and safe eating as much as you want!
