Mojama with Tomatoes, Avocado & Fresh Herbs

Ingredients

1 ounce mojama, cubed

1 pint cherry tomatoes, halved or whole

1/2 half avocado, cubed

1/4 cup fresh dill, chopped

2 tablespoons Thai basil, torn

1 small shallot, finely chopped or grated

1 tablespoon balsamic vinegar

2 tablespoons olive oil

Cracked black pepper, to taste


Directions

  1. In a medium-sized bowl, add the cubed mojama, tomatoes, avocado, and shallot. Add 1 tablespoon balsamic vinegar and 2 tablespoons olive oil. Gently toss to incorporate all ingredients.

  2. Toss in the 1/4 cup fresh dill, 2 tablespoons Thai basil, and a few turns of fresh cracked pepper to taste. 

  3. Empty contents of the bowl onto your favorite serving dish or salad bowl. Garnish with a few fresh dill fronds and whole Thai Basil leaves. And an extra drizzle of olive oil never hurts!
