Blistered Shishito Peppers

Ingredients

6 ounces shishito peppers
Olive oil
Red wine vinegar
Bottarga
Salt and pepper

Directions

  1. Place shishito peppers in a mixing bowl. Gently toss with 1 tablespoon olive oil, salt and pepper. Set aside.  

  2. Place a large sauté pan on high heat (or a very hot grill).  While the pan is heating up, add the shishitos, careful not to overlap them. Once the pan begins to smoke, add 1 tablespoon olive oil. Let blister on each side (about 2 minutes).

  3. In a medium-sized mixing bowl, add 2 tablespoons red wine vinegar, 1/4 cup olive oil, 2 ounces shaved bottarga. Add the blistered shishitos and gently toss, making sure the shishitos are coated evenly. Plate on your favorite serving dish. Add more shaved bottarga, serve and enjoy.
